Pumpkin Butter Parfait with Greek Yogart and candied walnuts

Tis the season of the pumpkin. Below you’ll find our recipe for pumpkin butter and how to make this dessert parfait.

What you’ll need

For the Pumpkin butter

  • 15oz (1 can) of pumpkin puree

  • 1 1/2 teaspoon of. cinnamon

  • 1/8 teaspoon of nutmeg

  • 1/2 teaspoon of ginger

  • 1/8 cup maple syrup

  • 1/4 cup of pure apple cider

  • 1/3 cup of coconut sugar or cane sugar

For The Candied walnuts

  • 1/2 cup of walnuts

  • 2 tablespoon melted butter

  • 1/4 cup cane sugar

For the Parfait

  • 1/4 cup Pumpkin butter

  • 1/4 Greek yogurt

  • a teaspoon of candied walnuts

What to do

For the Pumpkin Butter

  1. Combine all pumpkin butter ingredients in a pot on stove and heat.

  2. Cook mixture on high constantly until it being to bubble

  3. once the mixture is bubbling simmer for at least 20 min or until it reached almond butter consistency

For the Candied Walnuts

  1. preheat oven to 375

  2. Mix melted butter walnuts and sugar in a bowl

  3. Spread mixture on a baking tray and bake for 10-15 min. Watch to make surer it doesn’t burn.

For the Parfait

  1. layer pumpkin butter and greek yogurt and top with walnuts.
