Banana Bread
Sometimes you forget to eat those bananas sitting on the counter and sometimes you purposefully leave them so they start to go brown so you can make bread. I’m not one to judge. I’ve done both.
What you’ll need
4 medium bananas (3 large)
1/2 cup brown sugar
2 eggs
2 cups of all-purpose flour
3/4 tsp baking soda
Vanilla extract – I usually eyeball it with a nice glug but I recon its roughly a tsp.
1 stick of butter
½ cup of granulated sugar
1 tsp cinnamon
Optional honey-1 tablespoon – it can make the bread a bit dense but worth it for that subtle hint.
What To Do
1. Pre-heat oven to 350
2. Mash bananas
3. Beat eggs, sugar, vanilla and butter together then add mashed bananas and mix.
4. Mix remaining dry ingredients together.
5. Combine both wet and dry ingredients and mix
6. Pour into bread pan (9x5)
7. Put into oven and allow to cook for 50min to and hour or when you can insert a knife and it comes out clean.
8. Attempt to wait till it cools to slice but give in and slave butter on and enjoy!
