Peach Pie

My personal favourite fruit on the farm is peaches! Weird seeing that we only have 7 peach trees but well over 1000 apple trees. Peaches are everything to me so what better way to enjoy them besides fresh off the tree, then in a pie.

What You’ll Need

For the Pastry

1. 2 cups of flour (we used all-purpose)

2. Pinch of Salt

3. 1 Cup of Cold Lard

4. 1 Cup of Cold Water

For The Filling

  1. 6 Cups of Peaches

  2. 1 Cup Of White Sugar

  3. 1 tablespoon of Cinnamon

What To Do

For The Pastry

1. Combine flour and salt in a medium-size bowl.

2. Stir and add lard.

3. With a pastry cutter or knife cut cold lard into peas size pieces.

4. Add cold water a bit at a time until the dough is leaving/detaching from sides of the bowl - please note that you may need a little more or a little less of the water. The Dough should be wet but not so much that it’s sticking on the counter.

5. Flour surface and roll out dough large enough to fit. into the pie plate base. Roll out another large circle to cut strips to cross/lattice top pastry.

For The Filling And Final Steps

1. Preheat oven to 425F

2.in a large bowl peel and slice 6 cups with of sliced peaches.

3. Mix the sugar, cinnamon and flour in a bowl.

4.. Combine sugar mixture and peaches in a bowl and pour this mixture into a pie plate that is lined with raw pastry.

5.. Weave reaming pastry on top and lightly coat pastry with milk.

6. Bake pie in the oven for 45 min or until pastry appears golden brown.

7. Top with ice cream for an extra indulgent dessert and Enjoy!
