Farm Fresh BLT Salad

Craving something fresh yet indulgent? Well, look no further than our farm BLT Salad. Beautiful fried tomatoes crispy local bacon are just some of the tasty items in this to die for salad.

What you’ll need (2 portions)

  1. 3-4 medium Tomatoes (we used indigo apple and sunrise bumblebee)

  2. 1 loosely packed cup of Basil

  3. 1 tablespoon of pine nuts

  4. half lemon

  5. 1/3 cup of olive oil

  6. 1 clove of garlic

  7. 1 tablespoon yellow onion chopped

  8. 1 head of romaine

  9. 5 slice of bacon

  10. 1/3 cup of ricotta

  11. 1 egg

  12. 2/3 cup of panko

What To Do

  1. Add basil, lemon juice, pine nuts, olive oil, garlic and onion to a food processor and blend.

  2. Chop wash and plate romaine

  3. Slice tomatoes and salt- leave for 10 min.

  4. Cook bacon and do not discard bacon fat.

  5. Dredge tomatoes first in egg then in panko and fry in leftover bacon fat until golden brown

  6. Assemble the salad by layering romaine tomatoes and bacon on a plate.

  7. Dollop one tablespoon of ricotta on top of the salad and apply basil vinaigrette as desired.
